今日の料理:おからのサラダ Bean curd refuse salad
友達からおからを使ったおいしいサラダの作り方を教わった。
安いしうまいし栄養満点のおからは食材の優等生。
今晩さっそく作ってみた。
主な材料:
おから
人参、きゅうり、玉ねぎなどの生野菜
酢
塩
コショウ
好みに合わせて:
オリーブオイル
豆乳
マヨネーズ
など。
作り方:
1、おからを湯通しし、軽く濡らした布などで水をきる
2、人参、きゅうりなどの野菜を薄切りにして塩もみする
3、1が温かいうちに酢を振る
4、3に2を汁ごと加える
5、好みの調味料で味を整える
作ってみると意外と簡単で、食べたらおいしくボリュームもあり、
高得点の結果でした。

Bean curd refuse of soybean, or Okara in Japanese (it's not 'okra' by the way) is sold at supermarkets. It is a by-product of a very popular food, tofu. It is very cheap, about 30-50 yen for a bagful since tofu production leaves so much okara.
I made a salad using okara today. A friend gave me the recipe.
Ingredients:
Okara
Raw veggies carrots, cucumber, onion, etc.
Vinegar
Salt
Pepper
Method:
1, Parboil okara and sqzueeze the water to dry it
2, Slice all the veggies and add salt
3, Add vinegar to the okara
4, Mix the veggies with okara
5, Add seasonings of your choice (pepper, olive oil, etc.) You could add soymilk to moisten the salad.
I put it on spinach and tomatoes that I got at the local farmers market today and ate it. It was easy to make, healthy, and tasty.
I think it's worth a try.

Lunar, I'm curious about other okara recipes but the webpage doesn't seem to exist anymore...
CRUNCHY CAROBOLA
This treat tastes just like a chocolate cereal, but it's good for you! The recipe makes about a gallon of the crunchy snack ... which 'is tasty when eaten by the handful or served with milk as a breakfast food.
6 cups of okara
1 cup of peanuts
1 cup of sesame seeds
1/2 cup of carob powder
1 cup of raw wheat germ
2/3 cup of vegetable oil
1 cup of honey
1 cup of barley malt extract
3 cups of rolled oats
1 cup of sunflower seeds
1 cup of shredded coconut
1 teaspoon of salt
1 tablespoon of vanilla extract
1 tablespoon of almond extract
Mix all of the ingredients thoroughly. Spread the mixture thinly on shallow pans or cookie sheets and bake it at 300'F for 45 minutes, stirring every 10 to 15 minutes.
SOYBURGER SUPREME
A "tasteful" way to get rid of leftovers, this makes eight medium burgers.
2 beaten eggs
1 tablespoon of soy sauce
2 tablespoons of catsup
2 tablespoons of parsley flakes
1 small onion, chopped fine
1 cup of okara
3 tablespoons of nutritional yeast
2 tablespoons of oil or nut butter
1 teaspoon of salt
1/2 teaspoon of garlic powder
1 teaspoon of mustard powder
1/2 teaspoon of black pepper
1 cup of whole wheat flour
1 cup of cooked red beans, rice, oatmeal, potatoes, or leftover vegetables mashed to add bulk and flavor. (Raid the refrigerator!) hot sauce to taste
3 tablespoons of sesame seeds Combine all of the ingredients except the sesame seeds.
Grease a skillet lightly and heat it until it's medium-hot. Next, sprinkle the pan with sesame seeds, and drop in hamburger-sized circles of batter. Sprinkle more sesame seeds on top. Cover and cook the rounds until they're just barely solid. Then turn the patties and brown their other sides. Put the burgers into warm onion buns and smother them with your favorite condiments.
